To Make the Pizza Dough

1. Combine dry ingredients. In a large bowl or stand mixer, combine instant yeast, 1 cup of flour, sugar, salt, oregano and garlic. Stir to combine.

2. Add wet ingredients. Drizzle olive oil and water into your flour mixture and stir again to combine.

3. Stir stir stir. Slowly add 1 ½ cup of flour, stirring as you go. The dough should start to form a ball that pulls away from the side of your bowl.

4. Let the dough rise. Drizzle olive oil into a second large bowl, using a paper towel to coat the entire bowl, all the way up the sides. Place your pizza dough inside, then roll it to coat in oil. Cover with a plate, or plastic wrap and allow to rise for 30 minutes or until doubled in size.

5. Knead After your dough rises, remove from the oiled bowl and place on a clean, lightly floured surface. Knead until smooth, for about 30 seconds. Tip: Instead of flour, you can also use a drizzle of olive oil on the board, which helps create a crispier crust and keeps dough from sticking to your hands.

Want to save time? Make the dough a day or two before, storing it in an airtight, oiled container in the fridge. What if the dough puffs up and threatens to blast the lid off? Take the dough out and punch it down (literally, your kids will have a ball giving that dough the five-finger treatment.) Replace the top of the container and store until you’re ready.

6. Preheat your oven to 425F.

7. Form the dough. Use clean hands to form the dough into a big triangle that will fill an entire baking sheet. For best results, allow dough to come to room temperature before using. Drizzle olive oil on the baking sheet, and use a rolling pin to transfer the dough to the oil-lined pan.

8. Gently drizzle extra olive oil on top of the pizza dough, including the crust.

9. Add toppings: Ladle on tomato sauce, pile on the cheese, and add on super-sized veggies! Slice peppers in extra thick wedges. Lay tomato slices in groups of three, slightly overlapping, so they bake together as one big tomato. (Ditto for fresh mozzarella slices.) Even olives can go jumbo: snip 3-4 sliced olives open and lay them end to end, creating a large “O”.

10. Bake at 425F for 13-15 minutes on the lowest rack. For an extra crispy crust, remove the baking sheet for the last 3-5 minutes and continue baking directly on an oven rack.

11. Trim the edges. To achieve the perfect pizza slice look, slice the long edges off and enjoy them as a cook’s treat!
